SunQuest Cruises hosts annual celebration on SOLARIS yacht
Miramar Beach, Fla. (November 9, 2018) – Ring in the New Year in true Emerald Coast style and on the water. SunQuest Cruises is hosting its annual New Year’s Eve Fireworks, Dinner and Dancing Cruise on the SOLARIS yacht on Monday, December 31st from 8 pm – 12:30 am. Patrons will embark on a memorable evening that includes a five-course seated dinner, live entertainment, fireworks, party favors and champagne.

Guests will enjoy the elegant fusion of the luxurious yacht, ambiance, romance, staff and entertainment at this one-of-a-kind New Year’s Eve experience. Upon being greeted on-board by Captain Matt, guests are welcomed to start the evening with a cocktail from the full-service bar while taking in the sweeping views of the Sandestin resort and marina. As everyone explores all three indoor and outdoor decks, the SOLARIS chefs are freshly preparing gourmet cuisines on-board the yacht’s galley.
While the SOLARIS cruises the local waters, the five-course culinary adventure begins with a Jumbo Dry Seared Divers Scallop with a Bacon-Peach Chutney and Bourbon-Balsamic Reduction. The following course is a fresh Arugula Salad with Roquefort Blue Cheese, Roasted Pistachios, Port-Poached Pears, Pickled Daikon and a Blood Orange Vinaigrette. A Butternut Squash Bisque is the next course, with rich and creamy notes of Fall Spice, Cognac-Fennel Crème Fraîche and a Butter-Poached Lobster garnish.
Entree choices include a Horseradish-Crusted Sea Bass with Prosciutto-Wrapped Asparagus, Beef Short Rib Osso Buco with Smoked Gouda Potatoes Gratin, Andouille Apricot Pork Chop with Andouille Stuffing or Traditional Ratatouille with Wild Mushroom Heirloom Tomato Ragu. The evening concludes on a sweet note with a decadent Tiramisu with Mascarpone Cheese, Espresso, Kahlua, Hazelnut Liqueur Whipped Cream and Salted Hazelnut Caramel.
The soiree on the water continues with live music that can be heard from all three decks. At final countdown, guests will grab party favors and raise a glass to 2019 with a midnight Champagne toast. The sky will illuminate above as patrons enjoy the best seat in the house for the fireworks show from the nearby Sandestin resort.
